Ingredients

  • 1 pound linguine or fettuccine pasta
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 pound andouille sausage, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic and sliced andouille sausage. Cook for an additional 3-4 minutes until the sausage is browned.
  4. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Pour in the diced tomatoes and heavy cream, stirring to combine. Season with Cajun seasoning, salt, and pepper. Let the mixture simmer for 5-7 minutes until slightly thickened.
  6. Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for another 2-3 minutes to heat through.
  7. Remove from heat and stir in the chopped parsley and grated Parmesan cheese. Serve immediately.

Notes

  • For a spicier kick, add a teaspoon of red pepper flakes when cooking the vegetables.
  • You can also substitute the shrimp with chicken or scallops for a different flavor profile.
