- 2 cups cooked, shredded chicken
- 1/2 cup basil pesto
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shredded mozzarella cheese
- 1/4 cup pine nuts, toasted
- 1 head of butter or romaine lettuce, leaves separated
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken and basil pesto. Mix well until the chicken is evenly coated.
- Add the cherry tomatoes, mozzarella cheese, and toasted pine nuts to the chicken mixture. Gently fold to combine. Season with salt and pepper to taste.
- Take a lettuce leaf and spoon a generous amount of the chicken mixture into the center.
- Wrap the lettuce leaf around the filling, creating a wrap. Repeat with the remaining leaves and filling.
- Serve immediately, or refrigerate for up to 30 minutes before serving for a chilled option.

- For added crunch, include diced cucumbers or bell peppers in the chicken mixture.
