Description

Pizza Enchiladas are a delicious fusion of pizza and enchiladas, combining shredded chicken, pizza sauce, and cheese wrapped in flour tortillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • 8 large flour tortillas
  • 1/2 cup sliced pepperoni
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, pizza sauce, mozzarella cheese, cheddar cheese, Italian seasoning, pepperoni, bell peppers, and black olives (if using). Mix well until all ingredients are evenly coated.
  3. Take a tortilla and spoon about 1/4 cup of the chicken mixture onto the center. Roll the tortilla tightly and place it seam-side down in a greased 9×13 inch baking dish. Repeat with the remaining tortillas and filling.
  4. Once all the enchiladas are in the baking dish, pour any remaining pizza sauce over the top and sprinkle with Parmesan cheese.
  5. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  6. Remove from the oven and let cool for a few minutes. Garnish with fresh basil or parsley if desired before serving.

Notes

  • For a spicier kick, add sliced jalapeños to the filling or use a spicy pizza sauce.
  • Substitute the chicken with ground beef or turkey for a different flavor, or make it vegetarian by using black beans and extra veggies.
