Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 4 cups potatoes, peeled and diced (about 4 medium potatoes)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups corn (fresh, frozen, or canned)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the sliced smoked sausage to the pot and cook until browned, about 5-7 minutes.
  3. Stir in the diced potatoes, chicken broth, thyme, paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, add the corn and heavy cream to the pot. Stir well and cook for an additional 5 minutes until heated through.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
