- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (10 ounces) diced tomatoes with green chilies (such as Rotel)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro (optional)
- Tortilla chips, for serving
Instructions
- In a medium-sized slow cooker, add the softened cream cheese, shredded cheddar cheese, and shredded Monterey Jack cheese.
- Pour in the can of diced tomatoes with green chilies, including the juices.
- Sprinkle the garlic powder, onion powder, cumin, chili powder, salt, and black pepper over the cheese and tomatoes.
- Stir everything together until well combined.
- Cover the slow cooker and cook on low for 2 hours, stirring occasionally until the cheese is melted and the mixture is creamy.
- If desired, stir in the chopped fresh cilantro just before serving.
- Serve warm with tortilla chips for dipping.

- For a spicier version, add sliced jalapeños or a dash of hot sauce to the mixture before cooking.
