Ingredients

- 2 medium carrots, peeled and chopped
- 1 medium beet, peeled and chopped
- 1 medium apple, cored and chopped
- 1 cup fresh spinach
- 1 cup pineapple chunks (fresh or canned)
- 1 tablespoon fresh lemon juice
- 1 tablespoon ginger, grated
- 2 cups cold water
Instructions
- In a blender, combine the carrots, beet, apple, spinach, pineapple, lemon juice, ginger, and cold water.
- Blend on high until smooth, about 1-2 minutes.
- If desired, strain the mixture through a fine mesh sieve or cheesecloth to remove pulp for a smoother juice.
- Pour the juice into glasses and serve immediately over ice if preferred.
Notes
- For added sweetness, include a ripe banana or a tablespoon of honey.
