Description

A delightful Red Velvet Strawberry Cheesecake that combines the rich flavors of red velvet cake with creamy cheesecake and fresh strawberries.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 1/2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 large eggs
  • 1 tablespoon cocoa powder
  • 1 cup fresh strawberries, pureed
  • 1/4 cup heavy cream
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue to mix until well combined.
  4. Add the vanilla extract, sour cream, and eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  5. Stir in the cocoa powder and strawberry puree until fully incorporated, creating a smooth batter.
  6. Pour the cheesecake batter over the cooled crust in the springform pan. Smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  9. Before serving, whip the heavy cream until soft peaks form and spread it over the top of the cheesecake. Garnish with fresh strawberries.

Notes

  • For a chocolate twist, add chocolate chips to the cheesecake batter before baking.
  • Substitute the strawberry puree with raspberry or blueberry puree for a different berry flavor.
