Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, onion, bell pepper, egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into patties, about 2-3 inches in diameter. You should have about 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties in batches, being careful not to overcrowd the pan.
  4. Cook each patty for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
  5. Serve warm with lemon wedges on the side.
