A delicious and healthy recipe for salmon topped with fresh mango salsa.
Ingredients

- 4 (6-ounce) salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper. Place the salmon fillets on the sheet and drizzle with olive oil. Season with garlic powder, paprika, salt, and pepper.
- Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
- While the salmon is baking, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix well and set aside.
- Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
- Serve the salmon topped with a generous scoop of mango salsa.
Notes
- For added flavor, marinate the salmon in lime juice and spices for 30 minutes before baking.
- Substitute the mango with pineapple or peach for a different fruity twist in the salsa.
