Ingredients

  • 8 ounces spaghetti or linguine
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon

Instructions

  1. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with red pepper flakes, salt, and black pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque.
  4. Add the cooked pasta to the skillet, along with the reserved pasta water, lemon juice, and chopped parsley. Toss everything together until well combined.
  5. Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.
  6. Serve immediately, garnished with additional parsley and Parmesan if desired.

Notes

  • For a lighter version, substitute half of the butter with olive oil and use whole wheat pasta.
  • Add vegetables like spinach, cherry tomatoes, or bell peppers for extra flavor and nutrition. Sauté them with the garlic before adding the shrimp.
