Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 1 cup pineapple, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 avocado, sliced (optional)

Instructions

  1. In a large bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  2. Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
  3. In a separate bowl, combine the diced pineapple, red bell pepper, red onion, cilantro, and lime juice. Mix well to create the salsa.
  4. To assemble the bowls, place a serving of cooked rice at the bottom of each bowl. Top with cooked shrimp and a generous scoop of pineapple salsa.
  5. If desired, add sliced avocado on top for extra creaminess. Serve immediately.
