- 1 pound large shrimp, peeled and deveined
- 8 ounces cream cheese, softened
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes (canned or fresh)
- 1/4 cup diced green onions
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened cream cheese, Monterey Jack cheese, cheddar cheese, diced tomatoes, green onions, cilantro, minced garlic, chili powder, cumin, salt, and pepper. Mix until well combined.
- Gently fold in the shrimp until they are evenly coated with the cheese mixture.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the shrimp are cooked through and the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving. Serve warm with tortilla chips.
Notes
- For a spicier version, add diced jalapeños or a dash of hot sauce to the cheese mixture.
- You can substitute the shrimp with cooked chicken or a mix of vegetables for a different flavor profile.
