Description

A delicious dish featuring tender white asparagus topped with prosciutto and melted raclette cheese, perfect for a gourmet meal.


Ingredients

  • 2 pounds fresh white asparagus, peeled
  • 8 ounces prosciutto, thinly sliced
  • 8 ounces raclette cheese, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the peeled asparagus on a baking sheet. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to coat evenly.
  3. Roast the asparagus in the preheated oven for 15-20 minutes, or until tender and slightly caramelized.
  4. While the asparagus is roasting, prepare the prosciutto by cutting it into strips if desired.
  5. Once the asparagus is done, remove it from the oven and arrange the prosciutto strips over the top.
  6. Layer the raclette cheese slices over the prosciutto.
  7. Return the baking sheet to the oven and broil for an additional 3-5 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with fresh parsley before serving.

Notes

  • For a vegetarian option, replace prosciutto with sautéed mushrooms or spinach.
