- 2 pounds fresh white asparagus, peeled
- 8 ounces prosciutto, thinly sliced
- 8 ounces raclette cheese, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the peeled asparagus on a baking sheet. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to coat evenly.
- Roast the asparagus in the preheated oven for 15-20 minutes, or until tender and slightly caramelized.
- While the asparagus is roasting, prepare the prosciutto by cutting it into strips if desired.
- Once the asparagus is done, remove it from the oven and arrange the prosciutto strips over the top.
- Layer the raclette cheese slices over the prosciutto.
- Return the baking sheet to the oven and broil for an additional 3-5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For a vegetarian option, replace prosciutto with sautéed mushrooms or spinach.
- Add a sprinkle of crushed red pepper flakes for a bit of heat.
