Description

A delicious and hearty Spicy Southern Cheesy Chicken Spaghetti Casserole that combines tender chicken, creamy cheeses, and a kick of spice, perfect for family dinners.


Ingredients

  • 2 cups cooked spaghetti
  • 2 cups shredded cooked chicken
  • 1 cup diced tomatoes with green chilies (canned)
  • 1 cup cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup sliced black olives (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or a little olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  3. In a large mixing bowl, combine the cooked spaghetti, shredded chicken, diced tomatoes with green chilies, cream of chicken soup, half of the cheddar cheese, half of the Monterey Jack cheese, sautéed onion and bell pepper, garlic powder, paprika, cayenne pepper, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  4. Pour the mixture into the prepared baking dish and spread it out evenly. Top with the remaining cheddar and Monterey Jack cheeses, and sprinkle the sliced black olives on top if using.
  5. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  6. Once done, remove from the oven and let it cool for about 5 minutes. Garnish with chopped fresh parsley before serving.

Notes

  • For a spicier kick, add diced jalapeños or increase the cayenne pepper.
  • Substitute the chicken with cooked ground turkey or sausage for a different flavor profile.
