A delicious and easy recipe for Spinach and Feta Flatbread Pizza, perfect for a quick meal.

- 2 large whole wheat flatbreads
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 cup feta cheese, crumbled
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the flatbreads on a baking sheet and brush each with olive oil.
- In a skillet over medium heat, sauté the chopped spinach until wilted, about 2-3 minutes. Remove from heat.
- Evenly distribute the sautéed spinach over the flatbreads.
- Scatter the halved cherry tomatoes and crumbled feta cheese on top of the spinach.
- Sprinkle garlic powder, dried oregano, salt, and pepper over the toppings.
- Finish by adding the shredded mozzarella cheese on top.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a couple of minutes. Garnish with fresh basil leaves if desired.
- Slice and serve warm.
Notes
- For a spicier kick, add red pepper flakes before baking.
- Substitute the feta with goat cheese or ricotta for a different flavor profile.
