A delicious and hearty stuffed Italian meatloaf filled with marinara sauce, mozzarella cheese, and fresh vegetables.

- 1 ½ pounds ground beef
- 1 cup Italian sausage, casings removed
- 1 cup breadcrumbs
- 1 large egg
- ½ cup grated Parmesan cheese
- ½ cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup marinara sauce, divided
- 1 cup shredded mozzarella cheese
- 1 bell pepper, diced
- 1 small onion, diced
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the ground beef, Italian sausage, breadcrumbs, egg, Parmesan cheese, parsley, garlic, oregano, basil, salt, and pepper. Mix until well combined.
- On a sheet of parchment paper or plastic wrap, shape the meat mixture into a rectangle about 1 inch thick.
- Spread half of the marinara sauce over the meat, leaving a small border around the edges.
- Sprinkle the mozzarella cheese, diced bell pepper, and onion evenly over the sauce.
- Starting from one end, carefully roll the meatloaf up, using the parchment paper to help guide it. Pinch the edges to seal and place seam-side down in a greased baking dish.
- Brush the remaining marinara sauce over the top of the meatloaf.
- Bake for 1 hour or until the internal temperature reaches 160°F.
- Let it rest for 10 minutes before slicing.
Notes
- For a spicier version, add red pepper flakes to the meat mixture.
- You can substitute ground turkey or chicken for a leaner option.
- Serve with a side of garlic bread or a fresh salad for a complete meal.
