A creamy and delicious sausage potato soup that is perfect for a comforting meal.

- 1 pound Italian sausage (mild or spicy, your choice)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 medium potatoes, peeled and diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.
- Pour in the chicken broth and add the diced potatoes, carrots, celery, thyme, paprika, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low and let it simmer for about 20-25 minutes, or until the potatoes and carrots are tender.
- Stir in the heavy cream and shredded cheddar cheese, mixing until the cheese is melted and the soup is creamy. Heat for an additional 5 minutes.
- Serve hot, garnished with chopped parsley.
Notes
- For a lighter version, substitute the heavy cream with half-and-half or whole milk.
- Add some cooked bacon bits for extra flavor and crunch, or toss in some spinach or kale for added greens.
