Description

A creamy and delicious sausage potato soup that is perfect for a comforting meal.


Ingredients

  • 1 pound Italian sausage (mild or spicy, your choice)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, peeled and diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.
  3. Pour in the chicken broth and add the diced potatoes, carrots, celery, thyme, paprika, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low and let it simmer for about 20-25 minutes, or until the potatoes and carrots are tender.
  5. Stir in the heavy cream and shredded cheddar cheese, mixing until the cheese is melted and the soup is creamy. Heat for an additional 5 minutes.
  6. Serve hot, garnished with chopped parsley.

Notes

  • For a lighter version, substitute the heavy cream with half-and-half or whole milk.
  • Add some cooked bacon bits for extra flavor and crunch, or toss in some spinach or kale for added greens.
