Description

A delicious and hearty Southwest Ground Beef and Sweet Potato Skillet recipe that combines savory ground beef with sweet potatoes, black beans, and spices for a flavorful one-pan meal.

Ingredients

Scale
  • 1 pound ground beef
  • 2 medium sweet potatoes, peeled and diced (about 3 cups)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  4. Stir in the diced sweet potatoes, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.
  5. Pour in 1/2 cup of water, cover the skillet, and reduce the heat to medium-low. Cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  6. Once the sweet potatoes are cooked, stir in the black beans and corn. Cook for an additional 5 minutes until heated through.
  7. Taste and adjust seasoning if necessary. Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

  • For a spicier kick, add diced jalapeños or a dash of cayenne pepper when cooking the onions and bell pepper.
  • Substitute ground turkey or chicken for a leaner protein option, or use plant-based ground meat for a vegetarian version.
