- 2 cups fresh strawberries, hulled and halved
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter.
- In a small bowl, mix the melted butter and brown sugar until well combined. Pour this mixture into the bottom of the prepared cake pan.
- Arrange the halved strawberries in a single layer on top of the brown sugar mixture, cut side up.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, combine the milk, eggs, and vanilla extract. Add this mixture to the dry ingredients and stir until just combined. Be careful not to overmix.
- Pour the batter evenly over the strawberries in the cake pan, spreading it gently to cover the fruit.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully invert the cake onto a serving plate while it’s still warm.

- For added flavor, consider adding a teaspoon of lemon zest to the batter for a citrusy twist.
- Substitute half of the strawberries with blueberries or raspberries for a mixed berry upside-down cake.
