Preheat the air fryer to 400°F.
In a small bowl, combine garlic powder, onion powder, paprika, salt, and pepper. Rub the spice mixture evenly over the chicken breasts.
Drizzle olive oil over the chicken, ensuring it’s well coated.
Place the chicken in the air fryer basket and spray lightly with cooking spray. Cook for 12-15 minutes, flipping halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F.
Remove the chicken from the air fryer and let it rest for 5 minutes before slicing it into strips.
In a large bowl, combine chopped romaine lettuce, Caesar dressing, and Parmesan cheese. Toss until the lettuce is well coated.
Lay a tortilla flat and place a portion of the lettuce mixture in the center, followed by sliced chicken and cherry tomatoes if using.
Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Repeat with remaining tortillas.
Place the wraps seam-side down in the air fryer basket and cook at 400°F for an additional 3-5 minutes until the wraps are crispy and golden.
Slice in half and serve immediately.
