Ingredients
  

  • 8 ounces cheese tortellini fresh or frozen
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach fresh or frozen, thawed and drained
  • 1/2 cup breadcrumbs optional, for topping
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Cook the tortellini according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Cook for 2-3 minutes, stirring until the cheese is melted and the sauce is smooth.
  5. Add the cooked tortellini and spinach to the skillet, stirring to coat them in the Alfredo sauce.
  6. Transfer the mixture to a greased 9x13 inch baking dish. If using, sprinkle the breadcrumbs evenly over the top.
  7. Top with shredded mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  9. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley.
