- Preheat your large skillet or griddle over medium heat for about 3-5 minutes.
- Spread a thin layer of softened unsalted butter on one side of each slice of sourdough bread.
- On the unbuttered sides of two bread slices, generously spread about 1 tablespoon of apple butter each.
- Layer slices of Brie cheese over the apple butter on each slice of bread. Optionally add thinly sliced apples and thyme.
- Top each cheese-topped slice with the other bread slices, ensuring that the buttered sides are facing out.
- Place the assembled sandwiches onto the preheated skillet and cook for about 3-4 minutes on each side.
- Once both sides are browned and the Brie is melting, remove the sandwiches from the skillet, cool for a minute, then slice and serve.
