Step-by-Step Instructions
  1. Preheat your large skillet or griddle over medium heat for about 3-5 minutes.
  2. Spread a thin layer of softened unsalted butter on one side of each slice of sourdough bread.
  3. On the unbuttered sides of two bread slices, generously spread about 1 tablespoon of apple butter each.
  4. Layer slices of Brie cheese over the apple butter on each slice of bread. Optionally add thinly sliced apples and thyme.
  5. Top each cheese-topped slice with the other bread slices, ensuring that the buttered sides are facing out.
  6. Place the assembled sandwiches onto the preheated skillet and cook for about 3-4 minutes on each side.
  7. Once both sides are browned and the Brie is melting, remove the sandwiches from the skillet, cool for a minute, then slice and serve.
