  • 8 oz Pasta Whole wheat or gluten-free recommended
For Sautéing
  • 2 tbsp Olive Oil Or any neutral cooking oil
  • 1 lb Italian Sausage Turkey or vegetarian sausage can be used as an alternative
For the Vegetables
  • 1 lb Brussels Sprouts Can be left whole or halved
  • 2 cups Butternut Squash Cubed
For the Garlic Butter Sauce
  • 4 tbsp Unsalted Butter Can substitute with olive oil or vegan butter
  • 4 cloves Garlic Minced
For Flavoring
  • 0.5 cup Parmesan Cheese Grated
  • to taste Salt
  • to taste Pepper
  • 1 tsp Red Pepper Flakes Optional
  • 0.25 cup Fresh Parsley Chopped, for garnish

Method
 

Cooking Steps
  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta, and cook according to package instructions until al dente (8-10 minutes). Reserve ½ cup pasta water, then drain.
  2. Brown the Sausage: In a skillet, heat olive oil and cook the sausage for 5-7 minutes until browned. Remove and set aside.
  3. Sauté the Vegetables: In the same skillet, add more oil if needed and sauté Brussels sprouts and butternut squash for 10-15 minutes until tender.
  4. Prepare the Garlic Butter Sauce: Melt butter in a saucepan over low heat, add minced garlic, and cook for 1-2 minutes until fragrant.
  5. Combine Ingredients: Return sausage to skillet, add drained pasta and garlic butter sauce, and toss together gently.
  6. Adjust Consistency: If dry, stir in reserved pasta water until creamy. Season with salt, pepper, and red pepper flakes.
  7. Add Cheese and Finish: Stir in Parmesan cheese until melted and fully incorporated.
  8. Garnish and Serve: Remove from heat, garnish with parsley, and serve warm.
