Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F). Peel and cube the butternut squash. Toss with olive oil, salt, and pepper, and roast for 15-20 minutes.
  2. Trim the Brussels sprouts and halve them. Roast with olive oil, salt, and pepper for 20-30 minutes until golden and crispy.
  3. Cook the bow tie pasta according to package instructions. Drain, reserving a cup of pasta water.
  4. In a skillet, heat olive oil and sauté the cooked smoked sausage for 5-7 minutes until browned.
  5. Add minced garlic to the skillet and sauté for 1 minute. Then add butter and let it melt to create a sauce base.
  6. Combine the cooked pasta with the garlic butter sauce, seasoning with salt, pepper, and smoked paprika. Adjust consistency with reserved pasta water.
  7. Fold in the roasted squash, Brussels sprouts, and sausage. Stir until evenly mixed and heated through.
