Ingredients
  

  • 2 6-ounce salmon fillets
  • 4 ounces Boursin cheese garlic & herb flavor
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  3. Place the salmon fillets skin-side down on the prepared baking sheet.
  4. In a small bowl, mix the Boursin cheese, olive oil, lemon juice, dried dill, salt, and pepper until well combined.
  5. Spread the Boursin mixture evenly over the top of each salmon fillet.
  6. Scatter the halved cherry tomatoes around the salmon on the baking sheet.
  7. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
  8. Remove from the oven and let it rest for a few minutes.
  9. Garnish with fresh parsley before serving.
