Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and lightly grease a baking dish with olive oil.
  2. Season the cod fillets generously with salt and pepper on both sides.
  3. In a skillet, heat olive oil over medium heat, then sauté the chopped onion for 3-4 minutes until translucent.
  4. Add minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  5. Pour in the coconut milk, lemon juice, and lemon zest, stirring well and simmering for 5 minutes.
  6. Place seasoned cod fillets in the greased baking dish and pour the sauce over them.
  7. Bake for 20-25 minutes or until cod flakes easily with a fork.
  8. Let it rest for a few minutes before serving with jasmine rice or a salad.
