Step-by-Step Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Season the cod fillets with salt and pepper on both sides.
  3. In a skillet, heat olive oil and sauté the chopped onion for 3-4 minutes until translucent.
  4. Add minced garlic and grated ginger to the skillet and stir for an additional minute.
  5. Pour in the coconut milk, lemon juice, and lemon zest. Stir and let simmer for about 5 minutes.
  6. Transfer the seasoned cod to a baking dish and pour the sauce over it.
  7. Bake in the oven for 20-25 minutes until the cod flakes easily with a fork.
  8. Let the dish rest for a few minutes after baking.
  9. Serve alongside steamed jasmine rice or sautéed green beans.
