  • 1 cup mushrooms sliced
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are soft and golden.
  3. Add the chopped spinach to the skillet and cook for an additional 2-3 minutes until wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cottage cheese, garlic powder, salt, black pepper, and paprika. Stir until well mixed.
  5. Grease a baking dish with a little olive oil. Spread the spinach and mushroom mixture evenly in the bottom of the dish.
  6. Carefully crack the eggs over the vegetable mixture, spacing them evenly.
  7. Spoon the cottage cheese mixture over the eggs, ensuring each egg is covered.
  8. Sprinkle the shredded cheddar cheese on top.
  9. Bake in the preheated oven for 20-25 minutes, or until the eggs are set to your liking.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
