Preheat your oven to 400°F.
In a mixing bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, salt, black pepper, and dried thyme until well combined.
Place the chicken thighs in a large baking dish and pour the honey Dijon mixture over the chicken, making sure each piece is well coated.
Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F. Baste the chicken with the sauce halfway through cooking for extra flavor.
Once done, remove from the oven and let the chicken rest for 5 minutes before serving.
