Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup unsalted butter melted
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 tablespoon lemon zest
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Fresh parsley chopped (for garnish)

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes. Whisk until well combined.
  3. Add the chicken thighs to the bowl and toss to coat them evenly in the lemon butter mixture.
  4. Transfer the chicken thighs to a baking dish, pouring any remaining marinade over the top.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. For a golden finish, broil the chicken for an additional 2-3 minutes at the end of baking.
  7. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped parsley.
