- Preheat your oven to 425°F (220°C).
- Arrange halved potatoes and broccoli florets on a large sheet pan, drizzle with olive oil, and season with salt and pepper. Toss gently to coat.
- Roast the potatoes in the preheated oven for about 20 minutes.
- Remove the sheet pan and add salmon fillets among the potatoes and arrange the broccoli around them. Brush with olive oil and season before returning to the oven for an additional 12-15 minutes.
- In a small saucepan, heat olive oil and sauté chopped shallots until translucent (about 2-3 minutes).
- Stir in fresh thyme, deglaze with a splash of chicken broth, and simmer for a couple of minutes.
- Reduce heat, stir in heavy cream and lemon juice, and simmer for 4-5 minutes until slightly thickened. Adjust seasoning.
- Serve the Baked Salmon with crispy potatoes and broccoli, drizzling the creamy lemon sauce generously over the top.
