  • 3 ripe bananas mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 teaspoon ground cinnamon optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the baking soda and salt. Then, add the sugar, beaten egg, and vanilla extract, stirring until well combined.
  4. Gradually add the flour, mixing until just incorporated. If using, fold in the chopped nuts and cinnamon.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
