Step-by-Step Instructions
  1. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once shimmering, add 2 cups of diced sweet potatoes. Sauté for about 10–12 minutes until tender and lightly caramelized.
  2. Stir in 1 finely chopped red onion and 1 cup of corn. Cook for an additional 5–7 minutes until the onion is softened and translucent.
  3. Add in 2 cups of cooked, shredded chicken and 1 cup of your favorite BBQ sauce. Stir well to combine and allow the mixture to warm for about 3–4 minutes.
  4. Sprinkle 1 cup of shredded cheddar cheese over the skillet. Cover and let sit on low heat for about 2–3 minutes until the cheese is melted and bubbly. Garnish with chopped green onions if desired.
