Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Melt half a cup of white chocolate chips with three-quarters of a cup of salted butter until smooth.
  3. Whisk melted butter and white chocolate with half a cup of granulated sugar and three-quarters of a cup of brown sugar until light and fluffy.
  4. Add two room temperature eggs one at a time, whisking well after each addition.
  5. Fold in a cup and a half of all-purpose flour until just combined.
  6. Stir in the remaining half cup of white chocolate chips and a cup of crushed Biscoff cookies.
  7. Spread the batter evenly in the prepared pan and swirl in melted Biscoff spread before topping with more crushed cookies.
  8. Bake for 30 to 40 minutes until the edges are golden and the center remains soft.
  9. Allow to cool for 15-20 minutes before lifting out to slice into 12 bars.
