Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- Melt half a cup of white chocolate chips with three-quarters of a cup of salted butter until smooth.
- Whisk melted butter and white chocolate with half a cup of granulated sugar and three-quarters of a cup of brown sugar until light and fluffy.
- Add two room temperature eggs one at a time, whisking well after each addition.
- Fold in a cup and a half of all-purpose flour until just combined.
- Stir in the remaining half cup of white chocolate chips and a cup of crushed Biscoff cookies.
- Spread the batter evenly in the prepared pan and swirl in melted Biscoff spread before topping with more crushed cookies.
- Bake for 30 to 40 minutes until the edges are golden and the center remains soft.
- Allow to cool for 15-20 minutes before lifting out to slice into 12 bars.
