Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F), or 200°C (390°F) for non-fan-forced ovens.
  2. Unroll the puff pastry sheets on a clean surface and drizzle honey over each sheet.
  3. Sprinkle walnuts, blue cheese, Parmesan, and fresh thyme across each pastry sheet. Season with sea salt and cracked pepper.
  4. Roll each pastry sheet into a tight log and cut the log lengthwise in half.
  5. Twist both strips together to form a spiral shape, then coil into a circular shape, tucking the end to secure.
  6. Brush the twisted pastry with milk to create a beautiful golden crust.
  7. Bake for 25 to 30 minutes until puffed and golden brown.
  8. Let cool for a few minutes, then sprinkle with extra thyme leaves before serving.
