Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup brownie mix
For the filling:
  • 1/2 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1/4 cup brown sugar packed
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Method
 

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the semi-sweet chocolate chips and brownie mix until evenly distributed.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  10. While the cookies are cooling, prepare the filling by beating together the softened butter, powdered sugar, brown sugar, milk, and vanilla extract until smooth and creamy.
  11. Fold in the mini chocolate chips.
  12. Once the cookies are completely cooled, spread a generous amount of the filling on the flat side of one cookie and top with another cookie, flat side down, to create a sandwich.
  13. Repeat with the remaining cookies and filling.
  14. Serve immediately or store in an airtight container in the refrigerator for up to 5 days.
