Ingredients
  

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup cooked brown rice
  • 1 cup chopped romaine lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 1/4 cup sliced green onions
  • Salt and pepper to taste

Method
 

  1. In a medium bowl, combine the shredded chicken and buffalo sauce. Mix well until the chicken is fully coated.
  2. In serving bowls, layer the cooked brown rice as the base.
  3. Top the rice with the buffalo chicken mixture.
  4. Add a generous handful of chopped romaine lettuce on top of the chicken.
  5. Sprinkle diced tomatoes and shredded cheddar cheese over the lettuce.
  6. Drizzle ranch dressing over the entire bowl.
  7. Finish with sliced green onions and season with salt and pepper to taste.
