Ingredients
  

  • 2 large russet potatoes peeled and grated
  • 1 small onion finely chopped
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • 1/4 cup unsalted butter melted (plus more for frying)
  • Sour cream or applesauce for serving

Method
 

  1. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. Transfer to a large mixing bowl.
  2. Add the chopped onion, egg, flour, salt, pepper, and baking powder to the bowl with the potatoes. Mix until well combined.
  3. Heat a large skillet over medium heat and add a tablespoon of butter.
  4. Once the butter is melted and bubbling, scoop about 1/4 cup of the potato mixture into the skillet, flattening it slightly with the back of a spatula.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy. Repeat with the remaining mixture, adding more butter as needed.
  6. Serve hot with a dollop of sour cream or a side of applesauce.
