Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large, non-stick skillet over medium-high heat until shimmering.
  2. Season 1 pound of evenly cut chicken breast pieces with 2 tablespoons of Cajun seasoning, salt, and pepper.
  3. Add the seasoned chicken to the hot skillet and sauté for about 5-7 minutes until golden brown and cooked through.
  4. In the same skillet, add another tablespoon of olive oil if needed, then add sliced bell peppers and 2 cloves of minced garlic. Sauté for 3-5 minutes.
  5. Return the cooked chicken to the skillet with the sautéed bell peppers and stir together for an additional 2-3 minutes.
