  1. Preheat your oven to 375°F (190°C).
  2. Cook chopped bacon in a skillet until crispy, about 5-7 minutes. Set aside, reserving grease.
  3. Sauté thinly sliced onions in the reserved grease over medium heat for about 10 minutes.
  4. Reduce heat to low and caramelize onions for an additional 40 minutes, stirring frequently.
  5. Roll out pastry dough and fit into a 9-inch tart pan, prick the bottom with a fork and pre-bake for 15 minutes. Remove pie weights and bake for an additional 5 minutes.
  6. Layer the base of the crust with grated Gruyere cheese, followed by caramelized onions.
  7. In a bowl, whisk together eggs, heavy cream, and thyme. Pour this custard over the onions and cheese.
  8. If using bacon, sprinkle it over the tart along with any extra Gruyere cheese.
  9. Bake the tart in the oven for 25-30 minutes until filling is set and top is golden.
