Ingredients
  

  • 2 large carrots grated
  • 2 medium apples cored and diced (preferably Granny Smith or Fuji)
  • 1/2 cup raisins
  • 1/4 cup walnuts chopped
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the grated carrots, diced apples, raisins, and chopped walnuts.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
  3. Pour the yogurt dressing over the carrot and apple mixture.
  4. Toss everything together until well combined.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve cold and enjoy!
