  1. Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil over high heat. Add the rotini pasta and cook for 8–10 minutes, stirring occasionally, until al dente. Drain the pasta and set it aside.
  2. Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with Cajun seasoning, garlic powder, salt, and pepper. Cook the chicken for about 6–7 minutes on each side, or until golden brown and cooked through. Remove from skillet.
  3. Make the Creamy Sauce: Using the same skillet, melt butter, then add minced garlic and sauté for about 1 minute. Pour in chicken broth and heavy cream, stirring until combined. Simmer for 2–3 minutes until slightly thickened.
  4. Add the Cheese: Gradually stir in mozzarella, Parmesan, and cheddar cheese until melted and smooth. Adjust consistency with chicken broth as needed.
  5. Combine and Simmer: Slice chicken into bite-sized pieces and return to skillet along with drained pasta. Toss gently to coat and heat on low for an additional 2–3 minutes.
  6. Serve and Garnish: Garnish the dish with fresh parsley and extra cheese if desired. Serve hot.
