- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 pound of ground beef and cook for 5-7 minutes until fully cooked.
- Stir in 1 diced medium onion and 3 minced garlic cloves. Cook for another 3-4 minutes until onions are translucent and garlic is fragrant.
- Mix in 4 cups of diced potatoes, salt, black pepper, 1 teaspoon paprika, and 1 teaspoon dried oregano. Stir to coat.
- Pour in 1 cup of beef broth, cover the skillet and reduce heat to low. Simmer for 20-25 minutes until potatoes are tender.
- Once the potatoes are cooked, sprinkle 1.5 cups of shredded cheddar cheese on top. Cover and cook for 2-3 minutes until melted.
- Remove from heat and garnish with fresh parsley. Serve hot.
