For the Casserole
  • 1 pound Ground Beef can be substituted with ground turkey or chicken
  • 2 tablespoons Olive Oil can substitute with vegetable oil
  • 1 medium Onion yellow or white onions preferred
  • 3 cloves Garlic fresh garlic is recommended
For the Base
  • 4 cups Potatoes Russet or Yukon Gold are ideal
  • to taste Salt
  • to taste Black Pepper
  • 1 teaspoon Paprika smoked paprika can add a nice depth
  • 1 teaspoon Dried Oregano substitute with Italian seasoning if unavailable
For the Topping
  • 1.5 cups Cheddar Cheese can be swapped with mozzarella or Monterey Jack
  • 1 cup Beef Broth use vegetable broth for vegetarian option
  • to taste Fresh Parsley can be omitted or replaced with green onions

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 pound of ground beef and cook for 5-7 minutes until fully cooked.
  2. Stir in 1 diced medium onion and 3 minced garlic cloves. Cook for another 3-4 minutes until onions are translucent and garlic is fragrant.
  3. Mix in 4 cups of diced potatoes, salt, black pepper, 1 teaspoon paprika, and 1 teaspoon dried oregano. Stir to coat.
  4. Pour in 1 cup of beef broth, cover the skillet and reduce heat to low. Simmer for 20-25 minutes until potatoes are tender.
  5. Once the potatoes are cooked, sprinkle 1.5 cups of shredded cheddar cheese on top. Cover and cook for 2-3 minutes until melted.
  6. Remove from heat and garnish with fresh parsley. Serve hot.
