Preparation Steps
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay the low-carb tortillas flat. Sprinkle about 1/4 cup of mozzarella cheese on each, leaving a ½-inch border.
- Layer five slices of pepperoni on each tortilla on top of the mozzarella.
- Tightly roll each tortilla into a snug tube shape, sealing the seam down when placed on the baking sheet.
- Bake the roll ups for about 10 to 12 minutes until golden brown and cheese is bubbly.
- Allow to cool slightly, then slice into bite-sized pieces and serve with marinara sauce.
