Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Dice potatoes into 1-inch cubes and toss with olive oil, salt, and pepper. Roast for 25-30 minutes, flipping halfway through.
  2. In a skillet over medium heat, cook ground beef until browned, about 5-7 minutes. Drain excess fat, add taco seasoning and water, and let it simmer for 3-4 minutes.
  3. Transfer roasted potatoes to an oven-safe dish. Layer taco beef over the potatoes and sprinkle shredded cheese on top.
  4. Adjust oven to 375°F (190°C) and bake for about 10 minutes until cheese is melted. Broil for 2-3 minutes for a golden finish if desired.
  5. Remove from oven, let sit briefly, and top with optional garnishes before serving hot.
