Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a large mixing bowl, whisk together melted unsalted butter, granulated sugar, and light brown sugar until glossy.
  3. Add eggs and vanilla extract, whisking until fully incorporated and thickened.
  4. Sift in flour, baking powder, and salt, and gently fold until no dry streaks remain.
  5. Fold in chopped Biscoff cookies and white chocolate chunks, reserving some for topping.
  6. Spread half the blondie batter into the prepared baking dish, smoothing into an even layer.
  7. Microwave Biscoff cookie butter for about 15 seconds until pourable and drizzle over the batter.
  8. Spread the remaining batter over the cookie butter, covering it as much as possible.
  9. Sprinkle reserved chopped Biscoff cookies on top and bake for 35-40 minutes until lightly golden.
  10. Let cool completely before slicing into squares.
