- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, olive oil, cooked chicken, cherry tomatoes, and romaine lettuce.
- Pour the Caesar dressing over the mixture and toss until everything is well coated.
- Add the grated Parmesan cheese, and season with salt and pepper to taste. Toss again to combine.
- If desired, top with croutons for added crunch. Serve immediately or chill in the refrigerator for 30 minutes before serving for a colder dish.
