Ingredients
  

  • 8 ounces rotini pasta
  • 1 tablespoon olive oil
  • 2 cups cooked chicken shredded or diced
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
  • ½ cup Caesar dressing
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: croutons for topping

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled pasta, olive oil, cooked chicken, cherry tomatoes, and romaine lettuce.
  3. Pour the Caesar dressing over the mixture and toss until everything is well coated.
  4. Add the grated Parmesan cheese, and season with salt and pepper to taste. Toss again to combine.
  5. If desired, top with croutons for added crunch. Serve immediately or chill in the refrigerator for 30 minutes before serving for a colder dish.
