For the Finish
  • 1 tablespoon Lemon Zest fresh lemons yield the best results.
  • 2 tablespoons Lemon Juice fresh lemons yield the best results.
  • 1 cup Chicken Broth vegetable broth for a non-meat option.
  • 2 tablespoons Olive Oil essential for searing the chicken.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry and season with salt and pepper.
  3. Heat olive oil in the skillet and sear chicken thighs skin-side down for 6-8 minutes.
  4. Flip thighs and cook for another 5 minutes, then remove from skillet.
  5. Sauté sliced onion and minced garlic in the same skillet until translucent.
  6. Add chopped tomatoes, rosemary, thyme, lemon zest, and juice; cook for 5 minutes.
  7. Stir in black olives and chicken broth, combining all ingredients.
  8. Nestle seared chicken back into the skillet skin-side up.
  9. Bake in the oven for 30-35 minutes until chicken reaches 165°F (75°C).
  10. Baste chicken halfway through with pan juices.
  11. Allow to rest for a few minutes before serving, then serve warm.
