  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1 medium avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the chickpeas, diced avocado, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and gently toss until everything is evenly coated.
  4. Taste and adjust seasoning if necessary.
