In a large bowl, combine the cooked chicken and buffalo sauce. Toss until the chicken is well coated.
Thread the buffalo chicken onto the soaked wooden skewers, alternating with cherry tomatoes, cucumber, red onion, and celery.
Preheat a grill or grill pan over medium heat. Grill the skewers for about 5-7 minutes, turning occasionally, until heated through and slightly charred.
While the skewers are grilling, prepare the salad by placing the mixed greens in a large serving bowl.
Once the skewers are done, remove them from the grill and let them cool slightly.
Arrange the skewers on top of the mixed greens. Sprinkle with blue cheese and fresh parsley.
Drizzle ranch dressing over the salad just before serving.
